Smashed Cucumber & Sesame Salad

Serves 4 as a side

Method

  1. Step 1: Lay the cucumbers on a board and smash gently with the flat of a knife or a rolling pin until they split. Tear into rough bite-size pieces.

  2. Step 2: Toss with the salt and leave in a colander for 10 minutes to draw out water. Pat dry.

  3. Step 3: Whisk the garlic, black vinegar, soy, and sesame oil together.

  4. Step 4: Toss the cucumbers in the dressing, then spoon over the chilli crisp and sesame seeds. Serve straight away while cold and crisp.
